AGING
Fermentation and maceration have been performed in the inox vats and having finished the malolactic fermentation, the wine has laid down in the barriques for 12 months,after which the wine has matured in the bottle for a year,at least.

MATCHING WITH FOOD
It matches best with the local food-with ham, prosciutto, all red meat dishes, game meat and even fish. It goes perfectly with the spiced, red meat dishes, grilled meat dishes as well as with the sheep’s cheese.
